It’s time to don your plastic bibs and grab hold of your mallets for the third annual Crab Carnival at Byron Bay’s iconic The Balcony Bar and Oyster Co.
Running from 30 March until 30 April, 2018 the annual Crab Carnival at the Balcony has become an official crustacean celebration on the Byron food lovers’ calendar. Each year the one month carnival menu, designed by Executive Chef Sean Connelly, features fresh, seasonal crab dishes and matching drinks to get your claws into.
This year’s Crab Carnival menu is inspired by Sean’s passion for Italian cooking. For a lighter crab celebration Italian style he has created a Crab Bruschetta starter, featuring toasted sourdough served with a generous topping of blue swimmer crab, fennel, lemon, a good hint of chilli and crab mayo. To follow is a more decadent dish of creamy but not too rich Crab Risotto starring sweet pieces of golden king crab with mascarpone, parmesan, chive and refreshing lemon.
Crab Carnival regulars, never fear, as Sean’s signature Chilli Mud Crab is back for 2018! It’s a whole mud crab cooked with chilli, coriander and Sean’s Hot Sauce that will keep you licking your fingers. It’s worth the mess! The Mac & Crab, Sean’s crabby version of macaroni cheese, has also made a return. It’s a bake of Alaskan king crab and macaroni in a triple cheese sauce with a breadcrumb crust. Yum.
In addition to the Crab Carnival eats, the drinks team at the Balcony Bar and Oyster Co. has crafted a selection of celebratory sips to go with your crustaceans. The colossal Crabby Mary is a showstopper – it’s a typical Bloody Mary with a healthy measure of vodka and a crab claw to enjoy! A Cracking Good Thyme, which featured on last year’s carnival menu is back – it’s a personal favourite – featuring Ink Gin, peach liqueur, peach puree, tonic and thyme. While the new Bam Bam Thank You Ma’am features spiced rum from Husk Distillers, honey, ginger, lemon syrup, pineapple juice, orange bitters and salt served in a pannekin. It’s refreshing and local!
On Tuesday nights during the Balcony Bar and Oyster Co.’s Crab Carnival the kitchen is serving The Steam Pot for two which includes Alaskan king crab legs, whole blue swimmer crab, chorizo, potatoes and corn cooked in an old bay spiced broth. You need to pre-order this one so get your reservations in quick!
If you love crab make sure you get down to the Crab Carnival at the Balcony Bar and Oyster Co. over the next few weeks or you’ll have to wait another year to get cracking!
